Agnvs is an Extra Virgin Olive Oil produced exclusively with olives of the ‘Arbequina’ variety. The olives are harvested when they begin to ripen, generally at the end of October or beginning of November.
The production process is carried out cold within twelve hours of harvesting in order to achieve a high intensity of aroma, although this results in low fat yields. The oil is obtained using a cold extraction technique.
The soil of the Rioja Alavesa region is clayey-calcareous, which makes it nutrient-poor and only allows the cultivation of two types of plants: olives and vines. Due to the lack of nutrients, these crops receive a large amount of minerals from the soil, which gives them an exceptional fruit richness.
