Extra Virgin Olive Oil, made only with the ‘Arbequina’ variety.
It is harvested when the olives start to turn green, which is usually at the end of October or the beginning of November.
It is made cold, in less than twelve hours after harvesting the olives, which results in very low fat yields but achieves great intensity of aroma.
