Harvested by hand in the second week of October, in open boxes of 18-20 kilos.
Selection in the field of the oldest vines of the family and of the vines with less than four bunches of grapes per vine.
The grapes are placed in cold storage at 5°C for reception the following day.
A cold pre-fermentation maceration and spontaneous fermentation are carried out. Malolactic fermentation takes place in French oak for 12 months and then another 12 months in Eastern European oak.Visit another winery
